I’ve been enjoying these mini muffins this week, and so has my son. (I got an “Mmmm, these are good” from him. Since he has a bit of a sweet tooth, I take that as a positive sign.)
Oh, and I apologize. Vlogging has been a revealing process for me. Not only do I get to see what I look like when I talk, I also get to listen to myself, and well, turns out I mumble. I’m going to work on that. In the meantime, I added some subtitles to the video during some of the more mumbly parts.
Without further ado…the recipe.
Carob Mini Muffins
(They don’t have to be mini. That’s up to you.)
2 cups oat flour
1/2 tsp salt
2 tsp baking soda
6 Tbsp butter (melted)
1 cup banana baby food
1/2 cup unsweetened applesauce
1/2 cup carob powder
1/2 to 1 cup of walnuts (optional)
Preheat the oven to 375 degrees.
Mix the flour, salt, and baking soda.
In a separate bowl, hand mix the butter, egg, banana baby food, and applesauce. After the wet ingredients are thoroughly mixed, add the carob powder. Add the remaining dry ingredients.
Add the walnuts, and then spoon into well-greased mini muffin tins.
Bake for 18 minutes.
